Comfort Food: Loaded Baked Potato Soup
When my daughter had a baby, her friend brought her this soup for dinner and we both LOVED it! It has become a family favorite when you are wanting some comfort food! Try it, and I am sure it will go straight to your ever loving heart and soul! Share a bowl with someone you love!
4 baking potatoes
2/3 cup flour
2/3 cup butter
4 cups whole milk
2 cups chicken broth
3/4t salt
¾ t. pepper
12 slices of bacon
2 cups cheddar cheese, grated
8 ounces of sour cream
Bake potatoes in the oven. Scoop inside and set aside. Cook bacon in the oven while the potatoes bake at 350 until crispy. Crumble and set aside. Melt butter in large pot over medium low heat. Stir in flour to make a roux. Cook about one minute stirring constantly. Gradually pour in the chicken broth and milk while stirring. Turn the heat to medium and cook the soup until it starts to thicken. Add the potatoes, salt and pepper, and cheese. Stir well and continue on heat for about 15 minutes for flavors to blend. (If you would like to puree 2/3 of the soup, you can carefully use an immersion blender or pour into a blender. Be careful as hot soup will expand as it is blended- you can let it cool a bit before blending.) Mix in sour cream until well blended and serve immediately. Top with crispy bacon and cheese, green onion, even a dollop of sour cream if you chose! This makes about 8 cups of soup.
TIP: You can bake potatoes and bacon the day before so it doesn’t take so long to make.
