Peppermint is one of my favorite flavors…and chocolate brownies with peppermint? You can’t miss with that combination! If you are looking for a fabulous recipe that you can make ahead of time- this is a winner! It will make your Christmas dinner EASY to have a few things prepared ahead of time. This peppermint brownie recipe is made on a cookie sheet pan, and when you cut through these layers, it looks like your brownies have come from a bakery! There are so rich and fudgy, so you can cut them in small pieces to make an abundance of sweets at once! I put mine in the freezer and cut up a row or two on a plate to take to friends. They are ridiculously yummy! People always ask me for the recipe! Here you go my friends! Enjoy!
White Chocolate Raspberry Bars!
A new favorite side dish: Creamed Corn au Gratin
This is an amazing side dish with ham and potatoes- such comfort food!
I had it at a restaurant and instantly fell in love! The PERFECT holiday food!
12 oz. of heavy cream
1 lb. of frozen kernel corn (Trader Joe’s has great corn)
1 1/2 T. melted butter
1 1/2 T. Flour
2T. sugar
1/2 t. salt
Pinch of white pepper
Parmesan cheese, grated
Step 1- Combine the heavy cream, corn, salt, sugar and white pepper in a pot and bring to a boil. Turn down heat and simmer for 5 minutes.
Step 2- Make a roux from the butter and flour, add to corn, mix well and remove from heat.
(If you have never made a roux: Begin by heating 1-1/2 tablespoons butter in a saucepan over medium heat until a pinch of flour sprinkled into the butter will just begin to bubble. Then, whisk in 1-1/2 tablespoons of flour to form a thick paste the consistency of cake frosting. Continue whisking as the roux gently bubbles and cooks to the shade desired.)
Step 3- Transfer the corn mixture to a casserole dish, sprinkle with parmesan cheese and brown under the broiler. Just toast it, be careful not to burn it!
I often double this recipe, as everyone loves it. It is rich, so you only need a small serving, but the flavor is fabulous! Great for the holidays or when you need a special dish!
